I performed a new complete setup of the server in a Parallels virtual Machine: w2003, SQL Server STANDARD edition (180 day trial version) and MOPS.
I followed this Spanish howto to configure Cube Building and everything works fine.
You were right, Cube building is impossible without a full licensed SQL Server (and I think MS should warn it).
